Is an extended response like an essay?  Yes.  It is exactly like an essay.  Sometimes it's called a literary analysis.  In any case, the main, key feature to this type of essay is that it is not only a simple regurgitation of the plot.  Your teacher wants to read about your opinion.  Your teacher shouldn't care what your opinion is either, because he/she cares more about your ability to back up your opinion with evidence from the text.  That's why the prompt asks you to include quotes from the text.  


2. How to start and organize the essay.  It sounds like the theme that you have to discuss is already chosen for you.  Nature and man's place in it.  That sounds a lot like naturalism, so that is your general topic.  It's your job as the writer to now narrow that broad theme to a specific point about it.  You need to get that specific point down to a single sentence.  That is your thesis statement, and it will be the final sentence of your first paragraph. For example: "The theme of naturalism is evident in The Red Pony through A, B, and C."  You could have more than three points, but I do not recommend fewer than three.  


3.  What points to illustrate?  Using my thesis statement from above, those are the points that you are going to illustrate.  Whatever points that you do decide to make must refer back to the thesis.  If there is a point that you want to make, it needs to be in the thesis.  If you are making a point that doesn't apply to the thesis, don't include it (or rewrite the thesis).
