Why is carbonated water used to make soft drinks?

Carbonated water, which is water with dissolved carbon dioxide, is used to give drinks bubbles or fizziness. Carbon dioxide remains dissolved under pressure, but undissolves to create bubbles when pressure is released by opening the container. Dissolved CO2 gives soft drinks a flavor that people find refreshing, and some people find the efferescence soothing to an upset stomach.

Dissolved CO2 gives soft drinks a flavor that people find refreshing, and some people find the efferescence soothing to an upset stomach. 


Some beverages are naturally carbonated. The CO2 in beer and sparkling wine is produced by yeast during the fermentation process. Some seltzer water comes from the ground naturally carbonated, although most modern seltzer and minerals waters have added carbonation.


The first artificially carbonated beverage was invented by the English chemisty Joseph Priestley in 1767. Priestley, who also discoverd oxygen, developed a method of infusing CO2 into water by dripping sulfuric acid onto ground-up chalk, which is calcium carbonate, and capturing the CO2 which was then bubbled into water. `H_2SO_4 + CaCO_3 -> CaSO_4 + H_2O + CO_2` 


Carbonated drinks became more widely available after Johann Schweppe simplified the process and began to mass produce carbonated soft drinks in 1783.


Carbonated drinks can be made quickly at home with dry ice, which is solid carbon dioxide. As the dry ice undergoes sublimation the drink cools and some of the CO2 will dissolve. As with most gases, CO2 is more soluble in water at lower temperatures.
